There's a sexy lime tree that grew of it's own accord on the farm. Each year, it gives us loads of lime. We've used a simple traditional recipe to preserve this, in it's own juices. It has aged for 1 year beautifully blending lime with the spices. 
 
How to use: This preserve is not an Indian-style pickle. Rather, it pairs beautifully with Mediterranean platters.
