Sweet potato is known to be great for the gut, including for diabetics. Boosts immunity, neurological functioning, and vision.
It's high in Vitamin B6, dietary fibre and potassium. It also includes protein, Vitamic C, iron, calcium, and natural sugar.
The sweet potatoes this year are reflecting our work with the soil. They've grown rather happily and pretty much own the space they live in. We've two varieties, white and purple. Both taste super simply steamed and salted. Keep the skin! That's where the nutrition lives.
Hot Tip: The skin of fruit and veg carries much nutrition. If you trust the source of your food, eat the skin! This includes foods like sweet potato, potato, whole toor, etc.
